Caviar de la Freynelle![]() Over the past ten years Uruguayan Caviar has catapulted its way onto the epicurean map and is poised to become the toast of the world's gastronomes! In a recent taste-test Armen Petrossian, chairman of the company that bears his name, was unable to distinguish "acipenser baerii" from the best Russian. This farm-raised, hand processed osetra cavair is noted for its excellence, equal to the best from the Caspian Sea. The Rio Negro Aqua Farm, on Lake Baygorria, 300 kilometers north of Montevideo, was created in 1995 with the help of expert Russian biologists and is the first and only one of its kind in the southern hemisphere. "Malossol Sturgeon Caviar" can be characterized by its medium sized grains, ranging in colour from grey to golden brown and is appreciated for its delicate, nutty flavour which lingers in the palate.
